Today, Laura baked some cupcakes for Easter!
Banana cupcakes:
1 1/2 cups flour
1.2 tsp baking soda
3/4 tsp baking powder
1/8th tsp salt
6 TBS European style butter – softened
1/3 C light brown sugar – packed
1/2 Cup granulated white sugar
1 Large egg yolk
1 large egg
1 1/2 tsp vanilla bean paste
3/4 Cup of Buttermilk (or 3/4 cup milk with 1 tsp vinegar)
Buttercream Frosting:
4 cups Icing Sugar
3/4 Cup European style butter
1 1/2 tsp Vanilla Bean Paste
1-2 TBS milk
